Zucchini Farfalle

  • (8 oz. package) farfalle pasta
  • (1 Tbsp.) olive oil
  • (1) zucchini, chopped
  • (1 large) onion, chopped
  • Salt and pepper to taste

Zucchini Farfalle

An easy vegetarian dish of sauteed zucchini and onion with farfalle pasta.

  1. 1Fill a large pot with 2 quarts cold water and place over High heat. When boiling, add pasta and cook 8-10 minutes. Drain.
  2. 2Place a medium skillet over medium heat. Add oil. When hot, add zucchini and onion, saute until tender. Toss with hot pasta, add salt and pepper to taste and serve.
