Orange Beef Stir-Fry

Ingredients:
  • (3 large) navel oranges
  • (1 bunch) green onions, white parts thinly sliced, green parts cut into 1 in. pieces
  • (3 Tbsp.) sugar
  • (2 Tbsp.) cornstarch
  • (3 Tbsp.) reduced-sodium soy sauce
  • (3 cloves) garlic, minced
  • (1 Tbsp.) fresh gingerroot, minced
  • (1 1/2 lb.) beef sirloin steak, cut into 1/2 in. cubes
  • (1 Tbsp.) canola oil
  • (3 cups) hot cooked rice

Orange Beef Stir-Fry

Beef sirloin steak stir-fried in a soy orange sauce and served over tender rice with fresh orange strips and green onions.

    Instructions

  1. 1Zest 2 of the oranges, set aside. Use a potato peeler or pairing knife to cut thin strips off the third orange peel, set aside.
  2. 2Juice all oranges into a small bowl. Whisk in sugar and cornstarch. Add soy sauce, garlic, ginger, orange zest and thinly sliced green onions.
  3. 3Spray a large, nonstick skillet or work over medium-high heat. Add oil. When hot, add beef and stir-fry until browned. Stir sauce, pour over beef. Bring to a boil, stir-fry another 2 minutes.

  4. 4Serve over rice with orange strips and green onions on top.
