Lemon Tilapia Soup

  • (1 cup) jasmine rice
  • (2 cups) water
  • Zest and juice of 1 lemon
  • (4 cups) reduced-sodium chicken broth or vegetable broth
  • (1 b.) tilapia fillets or other firm white fish
  • (4 cups) bite-size pieces arugula or watercress, tough stems removed
  • (1 cup) finely shredded carrots
  • (1/4 cup) fresh mint, very thinly sliced
  • (2) scallions, finely chopped

Lemon Tilapia Soup

Tender jasmine rice simmered in a lemon broth with firm tilapia, peppery arugula and shredded carrots.

  1. 1Place a medium saucepan over medium heat. Add rice and water, simmer 20 minutes. Add lemon zest and juice, stir to combine.
  2. 2Place another medium saucepan over medium-high heat. Add broth, bring to a simmer, then reduce heat to medium-low. Add fish and cook 5 minutes. Take fish out of broth and cut into chunks.

  3. 3Top each portion of rice with fish, arugula, carrot, mint,scallions and 1 cup broth. Enjoy!
