Lime Mustard Shrimp

  • (2 tsp.) canola oil
  • (1 lb.) large shrimp, peeled and deveined
  • (1 Tbsp.) whole-grain Dijon mustard
  • (1 1/2 tsp.) chipotle hot pepper sauce
  • (2/3 cup) green onions, diagonally cut into 3 in. pieces
  • (1 medium) mango, peeled and diced
  • (1/4 cup) fresh cilantro, chopped
  • (4) lime wedges

Lime Mustard Shrimp

Fresh, large shrimp sauteed in tangy Dijon mustard and spicy chipotle sauce served with diced mango and a squeeze of lime.

  1. 1Place a large nonstick skillet over medium-high heat. Add oil. When hot, add shrimp and saute 1 minute. Stir in mustard and pepper sauce, saute another 2 minutes. Add onions, saute another minute.

  2. 2Take off heat, add mango. Stir to combine, add cilantro and serve. Enjoy with fresh squeezed lime.
