Spiced Steak and Salsa

  • (2 cups) tomato, seeded and chopped
  • (1 cups) frozen corn, thawed
  • (1/2 cup) red onion, finely chopped
  • (1/4 cup) fresh cilantro, chopped
  • (3 Tbsp.) fresh lime juice
  • (2 Tbsp.) extra-virgin olive oil, divided
  • (1 tsp.) kosher salt, divided
  • (1/4 tsp.) ground red pepper
  • (1 tsp.) garlic powder
  • (2 tsp.) ground cumin
  • (2 tsp.) paprika
  • (1 tsp.) chipotle chile powder
  • (3/4 tsp.) freshly ground black pepper
  • (1/2 tsp.) ground cinnamon
  • (1 1/2 lb.) flank steak, trimmed

Spiced Steak and Salsa

Flank steak coated in a seven-spice rub then grilled and served with a fresh tomato and corn salsa.

  1. 1Preheat outdoor grill or indoor grill pan to High.
  2. 2In a medium bowl, mix together tomato, red onion, cilantro, lime juice, 1 Tbsp. olive oil, 1/2 tsp. salt and red pepper; set aside.
  3. 3In a small bowl, combine garlic powder, cumin, paprika, chile powder, black pepper, 1/2 tsp. salt and cinnamon.
  4. 4Place 1 Tbsp. olive oil in a small bowl. Use a pastry brush to brush both sides of the steak with the oil, then coat with spices.
  5. 5Dip a small towel in olive oil and use it to grease the grill rack. Grill steak 8 minutes or to desired doneness, flipping once.
  6. 6Set meat aside 5 minutes, then cut across the grain. Serve steak with salsa.
