Salmon Cakes w/Lemon Herb Mayo
Ingredients:
- (1 lb.) wild salmon fillet, skinned
- (2 Tbsp.) red onion or scallion, finely chopped
- (2 Tbsp.) fresh cilantro, chopped
- (1/2 tsp.) fresh ginger, peeled and finely chopped
- (1/4 tsp.) kosher or sea salt
- (1/8 tsp.) freshly ground pepper
- (3/4 cup) reduced-fat mayonnaise
- (1/4 cup) reduced-fat sour cream
- (4) anchovy fillets, rinsed and chopped
- (3 Tbsp.) fresh chives, chopped
- (2 Tbsp.) fresh parsley, chopped
- (1 Tbsp.) capers, rinsed
- (2 tsp.) freshly grated lemon zest
- (1 tsp.) fresh lemon juice
- (1/8 tsp.) salt
- (1 Tbsp.) extra-virgin olive oil or canola oil

Instructions
- 1Carefully chop salmon into 1/4 in. pieces. Place in a large bowl, combine with onion, cilantro, ginger, kosher salt and pepper. Form into 4 equal patties and refrigerate at least 20 minutes, up to 2 hours.
- 2Meanwhile, process mayonnaise, sour cream, anchovies, chives, parsley, capers, lemon zest, lemon juice, salt and pepper to taste in a food processor until smooth, set
aside.
- 3Place a large nonstick skillet over medium heat. Add oil. When hot, place burgers in pan and cook 2-3 minutes per side. Serve each salmon cake w/ 1 Tbsp. mayo. Enjoy!
