Ingredients:
  • (3 Tbsp.) extra-virgin olive oil, divided
  • (8 oz.) whole-wheat angel hair pasta, broken into 2 in. pieces
  • (2 cups) green beans, cut into 1 in. pieces
  • (1 medium) onion, diced
  • (4 cloves) garlic, minced
  • (2 medium) tomatoes, diced
  • (1 cup) corn kernels, fresh or frozen (thawed)
  • (1/2 tsp.) dried oregano
  • (2 cups) “no-chicken” broth or vegetable broth
  • (1/2 tsp.) salt
  • (1/2 cup) finely shredded Cotija or Asiago cheese
  • (2) scallions, sliced
  • Lime wedges

Vegetarian Fideos

A vegetarian version of a traditional Spanish pasta dish, with toasted whole-wheat angel hair.

    Instructions

  1. 1Place a Dutch oven over medium heat. Add 2 Tbsp. oil. When hot, add pasta and cook 2-3 minutes. Set aside.
  2. 2Place pan back over medium heat and add 1 Tbsp. oil. When hot, add green beans, onion and garlic. Cook 3-5 minutes, stirring often.
  3. 3Stir in tomatoes, corn and oregano, cook another 1-2 minutes. Add broth, salt and toasted pasta, increase heat to High and bring to a boil.
  4. 4Once boiling, cover and cook on medium-low 10 minutes. Top with cheese and scallions. Serve with lime wedges.
