Nutty Lentil Burgers

Ingredients:
  • (6 cups) water
  • (1 cup) brown or French green lentils
  • (2 Tbsp.) extra-virgin olive oil, divided
  • (3/4 cup) carrot, finely chopped
  • (1/3 cup) shallots, finely chopped
  • (1/3 cup) celery, finely chopped
  • (1/4 cup) sliced almonds
  • (1 tsp.) fresh thyme, chopped
  • (1/2 tsp.) salt
  • (1/4 tsp.) freshly ground pepper
  • (1 large) egg yolk, lightly beaten
  • (1 Tbsp.) lemon juice

Nutty Lentil Burgers

Delicious and nutritious lentil and vegetable patties with flavors of almonds, herbs and spices.

About 20 minutes (plus 1 hour chilling)

About 45 minutes

    Instructions

  1. 1Pour water into a large saucepan and place it over High heat to boil. When boiling, add lentils, reduce heat to medium-low and simmer 25-30 minutes. Drain and set aside.

  2. 2Place a large skillet over medium heat. Add 1 Tbsp. oil. When hot, add carrot, shallots and celery. Cook 3 minutes, stirring often. Add almonds, thyme, salt and pepper, cook another 2 minutes.

  3. 3Pour into a food processor with 1 cup lentils, process until coarse. Add to a large bowl with the rest of the lentils and set aside to cool.
  4. 4After 10 minutes, add egg yolk and lemon juice, stir to combine, cover and chill 1 hour.
  5. 5Place another large, nonstick skillet over medium-high heat. Add 1 Tbsp. oil. Form lentil mixture into 5 equal patties.
  6. 6When hot, add patties and cook 6-10 minutes, turning once. Serve on whole-wheat buns or wrap in lettuce*, enjoy!
