  • (2 Tbsp.) extra-virgin olive oil
  • (2 large) carrots, finely chopped
  • (1 large) onion, diced
  • (2 Tbsp.) minced garlic
  • (1 tsp.) fresh rosemary, chopped
  • (2 14-oz. cans) vegetable broth
  • (2 medium) zucchini, diced
  • (9 oz.) fresh or frozen spinach and cheese tortellini
  • (4) plum tomatoes, diced
  • (2 Tbsp.) red-wine vinegar

Ini Soup

Plump spinach and cheese tortellini in tasty vegetable broth with tomatoes, herbs and more veggies.

  1. 1Place a Dutch oven over medium heat. Add oil. When hot, stir in carrots and onion. Cover and cook 6-7 minutes. Add garlic and rosemary, cook another minute, stirring frequently.

  2. 2Add broth and zucchini. Bring to a boil, then reduce heat and cook 3 minutes, stirring once or twice. Add tortellini and tomatoes, cook another 6-10 minutes. Add vinegar and serve.
