Pork Chops w/Cranberry Sauce

Ingredients:
  • (1/4 tsp.) dried thyme leaves
  • (1/4 tsp.) salt, divided
  • (1/4 tsp.) freshly ground pepper, divided
  • (4 1-lb.) boneless pork loin chops, trimmed of fat
  • (2/3 cup) cranberry juice cocktail or orange juice
  • (2 3/4 Tbsp.) clover or other mild honey
  • (2 tsp.) canola oil
  • (1/4 cup) onion, chopped
  • (1 cup) cranberries, fresh or frozen, thawed, coarsely chopped

Pork Chops w/Cranberry Sauce

Simple boneless pork loin chops topped with a chunky, sweet cranberry sauce.

    Instructions

  1. 1In a small bowl, combine thyme and 1/8 tsp. each salt and pepper. Season both sides of pork chops with seasoning.
  2. 2Place a large, nonstick skillet over medium-high heat. Add oil. Cook pork chops 4-6 minutes, turning once. Place onion on one side of the pan and cook 1-2 minutes.

  3. 3In a small bowl, combine cranberry juice and 2 1/2 Tbsp. honey. Add half of mixture to pan with cranberries. Cook on medium 2-4 minutes, flipping the pork chops halfway through.

  4. 4Set pork chops aside on a plate with a foil tent. Place pan back over High heat and add other half of juice mixture. Cook 2 minutes, add 1/8 tsp. salt and pepper and honey to taste.

  5. 5Top pork chops with cranberry sauce and serve.
