Instructions
1Place a medium nonstick skillet over medium heat. Add 2 tsp. oil. When hot, add onion and cook 3-4 minutes, stirring often. Add potatoes, thyme and paprika, cook another
2 minutes.
2In a large bowl, whisk together eggs and egg whites. Slowly add hot potatoes, cheese, spinach, salt and pepper to eggs while stirring.
3Use a paper towel to wipe out pan and place it back over medium heat. Add 1 tsp. oil. When hot, add egg and potatoes back to pan and cook 4-5 minutes. Carefully flip and cook another 3-6 minutes, serve.
