Potato Egg and Spinach Pie

  • (3 tsp.) extra-virgin olive oil, divided
  • (1 small) onion, thinly sliced
  • (1 cup) precooked diced red potatoes
  • (1 Tbsp.) fresh thyme, chopped
  • (1/2 tsp.) smoked paprika
  • (6 large) eggs
  • (4 large) egg whites
  • (1/2 cup) shredded Manchego or Jack cheese
  • (3 cups) baby spinach, roughly chopped
  • (1/2 tsp.) salt
  • (1/2 tsp.) freshly ground pepper

Potato Egg and Spinach Pie

A delicious skillet egg pie made with starchy red potatoes, shredded cheese and nutritious spinach.

  1. 1Place a medium nonstick skillet over medium heat. Add 2 tsp. oil. When hot, add onion and cook 3-4 minutes, stirring often. Add potatoes, thyme and paprika, cook another 2 minutes.

  2. 2In a large bowl, whisk together eggs and egg whites. Slowly add hot potatoes, cheese, spinach, salt and pepper to eggs while stirring.
  3. 3Use a paper towel to wipe out pan and place it back over medium heat. Add 1 tsp. oil. When hot, add egg and potatoes back to pan and cook 4-5 minutes. Carefully flip and cook another 3-6 minutes, serve.
