Lean chicken breasts pounded thin and served with a flavorful apricot and wine sauce.

Instructions
1Place a large skillet over medium heat. Add oil.
2On a flat surface, lay out one piece of plastic wrap. Place the chicken breasts on top, then another piece of plastic wrap.
3Pound the chicken until it is all 1/2 inch thick. Season both sides with 1/4 tsp. each salt and pepper.
4Empty flour into a shallow dish. Dredge both sides of the chicken in the flour, shaking off any excess flour.
5Place the chicken in the preheated skillet, cook 3-5 minutes per side or until cooked through. Set aside, keep warm.
Remove pan from heat, add wine and shallots.
6Place back on heat, cook 3 minutes, using a wooden spoon to scrape the bottom of the pan. Add apricots, cook 2-3 minutes, stirring frequently.
7Add preserves, tarragon and 1/2 tsp. salt, stir to combine. Place chicken back into pan, cook another 1-2 minutes. Serve and enjoy!
