Simple Mushroom Turkey Burgers

  • (2 slices) whole-wheat sandwich bread, crusts removed, torn into pieces
  • (8 oz.) white mushrooms, wiped clean
  • (3 tsp.) extra-virgin olive oil, divided
  • (1 medium) onion, finely chopped
  • (2 cloves) garlic, minced
  • (1 lb.) lean ground turkey breast
  • (1 large) egg, lightly beaten
  • (3 Tbsp.) fresh dill, chopped
  • (1 1/2 Tbsp.) coarse-grained mustard
  • (1/2 tsp.) salt
  • (1/4 tsp.) freshly ground pepper
  • (6) whole-wheat buns, (optional)
  • (6) Lettuce leaves
  • (6) slices tomato

Simple Mushroom Turkey Burgers

Lean turkey patties made with chopped white mushrooms served on whole-wheat toasted buns with lettuce and tomato.

  1. 1Pulse bread in a food processor until crumbed. Set aside in a large bowl, then add mushrooms to food processor and pulse until finely chopped.
  2. 2Place a large nonstick skillet over medium-high heat. Add 2 tsp. oil. When hot, add onion, garlic and mushrooms.
  3. 3Cook 10 minutes, or until tender, stirring every few minutes. Combine with mushrooms and set aside to cool.
  4. 4Preheat grill to medium-high heat.
  5. 5When mushroom mixture is completely cooled, add ground turkey, egg, dill, mustard, salt and pepper. Use a potato masher or fork to mix, then form into 6 even patties.

  6. 6Put 1 tsp. olive oil in a small bowl. Use a pastry brush to brush each patty with oil. Also dip a cloth in oil and grease the grill rack.
  7. 7Grill burgers about 10 minutes, flipping halfway through. If using, toast buns on grill for about a minute. Serve burgers with lettuce and tomato on grilled buns.
