Ingredients:
  • (1 cup) peach, peeled and chopped
  • (3/4 cup) cherry tomatoes, quartered
  • (1/4 cup) red onion, thinly vertically sliced
  • (3 Tbsp.) small fresh mint leaves
  • (3 Tbsp.) small fresh basil leaves
  • (2 Tbsp.) fresh lemon juice
  • (1 Tbsp.) extra-virgin olive oil
  • (1 Tbsp.) honey
  • (1) jalapeño pepper, thinly sliced (optional)
  • (1 tsp.) kosher salt, divided
  • (4 6-oz. fillets) wild Alaskan king salmon
  • (1/4 tsp.) freshly ground black pepper

Grilled Salmon w/Peach Salsa

Simple grilled Alaskan salmon fillets served with a sweet and spicy peach salsa.

    Instructions

  1. 1Preheat outdoor grill or indoor grill pan to High.
  2. 2In a large bowl, combine peach, tomatoes, red onion, mint, basil, lemon juice, olive oil and honey. Add jalapeno and 1/4 tsp. salt, toss to combine; set aside.

  3. 3Season both sides of salmon fillets with 3/4 tsp. salt and black pepper. Dip a small towel in olive oil and use it to grease the grill rack.
  4. 4Grill salmon 5 minutes on each side, or according to your preference. Serve each fillet with 1/2 cup peach salsa.
