Nutty Buttered Gnocchi

  • (1 lb.) fresh or frozen gnocchi
  • (2 Tbsp.) butter
  • (2 medium) shallots, chopped
  • (3 small) zucchini, sliced into ribbons
  • (1 pint) cherry tomatoes, halved
  • (1/2 tsp.) salt
  • (1/4 tsp.) grated nutmeg
  • Freshly ground pepper, to taste
  • (1/2 cup) grated Parmesan cheese
  • (1/2 cup) fresh parsley, chopped

Nutty Buttered Gnocchi

An easy to make dish of tender gnocchi in a brown butter sauce with vegetables, Parmesan cheese and fresh herbs.

  1. 1Fill a large pot with 6 quarts water and place over High heat. When boiling, add gnocchi and cook 3-5 minutes, or follow cooking times of package. Drain and set aside.

  2. 2Place a large skillet over medium-high heat. Add butter, cook 2 minutes. Stir in shallots and zucchini, cook another 2-3 minutes. Add tomatoes, salt, nutmeg and pepper, cook 1-2 minutes, stirring frequently.

  3. 3Add Parmesan, parsley and gnocchi, toss and serve.
