Greek Chicken Skewers

Ingredients:
  • (2 lb.) boneless, skinless chicken breasts, cut into 1 1/2 in. cubes
  • (1/4 cup) olive oil
  • (1/4 cup) dry white wine
  • (2 Tbsp.) lemon juice
  • (2 tsp.) fresh oregano leaves, chopped
  • (4 cloves) garlic (2 crushed, 2 minced)
  • (1 tsp.) kosher salt
  • (1/2 tsp.) pepper, divided
  • (1/2) English cucumber, coarsely shredded and squeezed dry
  • (14 oz.) nonfat Greek yogurt
  • (2 tsp.) distilled white vinegar

Greek Chicken Skewers

Lemon-oregano chicken grilled on skewers and served with a cucumber yogurt sauce.

    Instructions

  1. 1Heat outdoor grill or indoor grill pan to High.
  2. 2In a large bowl, toss chicken with oil, wine, lemon juice, oregano, crushed garlic, salt and 1/4 tsp. pepper. Put chicken onto 8 skewers.
  3. 3Grill 10-12 minutes, turning every few minutes to cook evenly.
  4. 4Combine cucumber, yogurt, minced garlic, 1/4 tsp. pepper and vinegar. Serve alongside chicken w/pita.*
