Ingredients:
  • (3 tsp.) toasted sesame oil, divided
  • (4 large) eggs, lightly beaten
  • (2 tsp.) fresh ginger, minced
  • (2 cloves) garlic, minced
  • (12 oz. bag) shredded mixed vegetables
  • (2 cups) mung bean sprouts
  • (1 bunch) scallions, sliced and divided
  • (1 Tbsp.) reduced-sodium soy sauce
  • (1 Tbsp.) rice vinegar
  • (2 Tbsp.) hoisin sauce

Sesame Ginger Veggies

An Asian-flavored vegetable stir fry made with bean sprouts, scallions and fried eggs.

    Instructions

  1. 1Place a large nonstick skillet over medium heat. Add 1 tsp. oil. When hot, add eggs and cook 2-3 minutes, stirring occasionally. Pour onto plate.

  2. 2Use a paper towel to wipe out pan and place it back over medium heat. Add 2 tsp. oil. When hot, add ginger and garlic, stir 1 minute.
  3. 3Stir in shredded vegetables, bean sprouts, half of scallions, soy sauce and vinegar. Cover and cook 3 minutes, stirring occasionally.
  4. 4Place eggs back in pan along with hoisin sauce, break up eggs and cook another 1-2 minutes. Serve with rest of scallions.
