Beef and Mushroom Melt

Ingredients:
  • (12 oz.) 93%-lean ground beef
  • (2 cups) portobello mushroom caps, gills removed and finely chopped
  • (3 Tbsp.) plain dry breadcrumbs
  • (1 Tbsp.) Worcestershire sauce
  • (1 tsp.) fresh thyme, chopped (or 1/2 tsp. dried)
  • (1/4 tsp.) salt
  • (1/4 tsp.) freshly ground pepper
  • (4 slices) rye bread
  • (1 clove) garlic, peeled
  • (8 tsp.) pickle relish
  • (4 slices) Swiss cheese

Beef and Mushroom Melt

Toasted rye garlic bread topped with a beef and mushroom patty, pickle relish and melted Swiss cheese.

    Instructions

  1. 1With oven rack in the upper third position, preheat broiler. Place a sheet of foil on a broiler pan.
  2. 2In a medium bowl, combine beef, mushrooms, breadcrumbs, Worcestershire, thyme, salt and pepper. Form into 4 equal patties and place on pan. Broil 8-12 minutes, flipping once.

  3. 3Toast bread. While hot, rub with peeled garlic. Top with a burger, 2 tsp relish and cheese. Take foil off pan and broil burgers about a minute to melt the cheese.
