Brown Sugar Steak w/Onions

Ingredients:
  • (2 Tbsp.) canola oil, divided
  • (2 large) onions, sliced
  • (1 Tbsp.) brown sugar
  • (1/2 cup) reduced-sodium beef broth
  • (1 Tbsp.) balsamic vinegar
  • (1/2 tsp.) salt, divided
  • (1/4 tsp.) freshly ground pepper
  • (1 lb.) beef tenderloin or sirloin steak, trimmed and cut into 4 steaks
  • (1/4 cup) crumbled Gorgonzola or blue cheese

Brown Sugar Steak w/Onions

1/4 lb. beef steaks topped with crumbled Gorgonzola cheese and caramelized brown sugar onions.

    Instructions

  1. 1Place a large skillet over medium heat. Add 1 Tbsp. oil. When hot, add onions and brown sugar. Cook 15 minutes, stirring frequently.
  2. 2Stir in broth, vinegar and 1/2 tsp. salt. Cook 3-4 minutes, stirring often. Pour into a bowl, cover and set aside.
  3. 3Place another large skillet over medium-high heat. Add oil. Season both sides of steaks with 1/4 tsp. salt and pepper.
  4. 4Cook steaks 3-5 minutes, flip and add cheese to the top. Cover and cook on medium-low another 3-5 minutes, or to desired doneness. Top with onions and serve.
