Sun-Dried Penne
A vegetarian and vegan pasta dish of penne with crunchy walnuts, firm tofu and sun-dried tomatoes.

Instructions
1Place 3 quarts of water into a large saucepan and bring to a boil over high heat. When boiling, add penne and cook about 8 minutes, or according to package directions.
2Meanwhile, in a large bowl combine minced garlic, walnuts, sun-dried tomatoes, oil and basil. Add tofu,
mash with a spoon.
3Drain pasta, toss with tofu mixture. Season with a dash of salt. Serve and enjoy!
