Greek Vegetable Pasta

  • (1 lb.) whole-wheat penne
  • (2 tsp. plus 1 Tbsp.) extra-virgin olive oil, divided
  • (1 medium) onion, sliced
  • (1/2 tsp.) salt
  • (1) yellow bell pepper, sliced
  • (1 medium) zucchini, trimmed, halved lengthwise and thinly sliced
  • (3 cloves) garlic, minced
  • (1/2 cup) dry white wine
  • Freshly ground pepper, to taste
  • (1 1/2 cups) baby peas
  • (1/2 cup) packed fresh mint leaves, chopped
  • (3/4 cup) crumbled feta cheese

Greek Vegetable Pasta

Whole-wheat penne with sauteed vegetables, mint and feta cheese in a garlic white wine sauce.

  1. 1Fill a large pot of water with 4-5 quarts cold water and place over High heat. When boiling, add pasta and follow cooking times on package.
  2. 2Meanwhile, place a large nonstick skillet over medium-high heat. Add 2 tsp. oil. When hot, add onion and salt and cook 3-5 minutes, stirring occasionally.

  3. 3 Add bell pepper and zucchini, cook another 3 minutes. Add garlic, stir 1 minute. Add wine and pepper, simmer another 1-2 minutes.
  4. 4Measure out 1/2 cup pasta cooking liquid. Drain pasta and return to pot. Stir in cooking liquid, vegetables, 1 Tbsp. oil, peas, mint and feta cheese. Serve and enjoy.
