Parmesan Asparagus Penne

  • (4 oz.) whole-wheat penne pasta
  • (1/2 bunch) asparagus, trimmed and cut into 3/4 in. pieces
  • (3/4 cup) whole milk
  • (2 tsp.) whole-grain mustard
  • (2 tsp.) all-purpose flour
  • (1/8 tsp.) salt
  • (1/4 tsp.) freshly ground pepper
  • (1 tsp.) extra-virgin olive oil
  • (2 Tbsp.) minced garlic
  • (1 tsp.) fresh tarragon, minced (or 1/4 tsp. dried)
  • (1/4 tsp.) freshly grated lemon zest
  • (1 tsp.) lemon juice
  • (1/2 cup) freshly grated Parmesan cheese, divided

Parmesan Asparagus Penne

A creamy pasta dish featuring healthy whole-wheat penne and crisp-tender asparagus.

  1. 1Fill a large saucepan with 1-2 quarts cold water and place over High heat. When boiling, add pasta and cook 6 minutes. Add asparagus and cook another 3 minutes, drain and set aside in pot.

  2. 2Place a small saucepan over medium-high heat. Add oil. When hot, add garlic and stir about 1 minute.
  3. 3In a medium bowl, combine milk, mustard, flour, salt and pepper. Add to pan, whisk and simmer 1-2 minutes.
  4. 4Add tarragon, lemon zest and lemon juice to sauce, toss with pasta. Place back over medium-high heat and cook until thickened. Add half of cheese, stir to combine. Serve with rest of cheese.
