Grilled Chicken w/Summer Veggies

  • (3 Tbsp.) fresh flat-leaf parsley, chopped
  • (1 Tbsp.) minced garlic
  • (1 Tbsp.) sweet paprika
  • (2 tsp.) olive oil
  • (1 tsp.) cumin
  • (1/4 tsp.) cinnamon
  • (1 1/2 lb.) boneless, skinless chicken breasts
  • (3/4 lb.) medium zucchini, cut lengthwise into 1/4 in. thick slices
  • (3/4 lb.) small eggplant, cut into 1/4 in. thick slices
  • (3/4 lb.) mini sweet peppers
  • (1/2 tsp.) sea salt
  • (1/2 tsp.) black pepper
  • (1 medium) red onion, sliced

Grilled Chicken w/Summer Veggies

Boneless, skinless chicken breasts marinated in a spice paste then grilled and served with simple grilled veggies.

  1. 1Place chicken in a shallow baking dish. In a small bowl, whisk together parsley, garlic, paprika, oil, cumin, cinnamon, 1/2 tsp. sea salt and 1/4 tsp. black pepper.

  2. 2Cover chicken with paste, cover and refrigerate 15 minutes.
  3. 3Use a small towel dipped in oil to grease the grill and preheat to medium. In a large bowl, toss vegetables with olive oil, salt and pepper. Add to grill pan.

  4. 4Grill vegetables 7-10 minutes, stirring occasionally. Grill chicken 17 minutes, turning often. Serve chicken with vegetables, enjoy.
