Ginger Garlic Pork Stir Fry

Ingredients:
  • (3 cups) cut broccoli, steamed, rinsed and drained
  • (3/4 cup) fat-free reduced-sodium chicken broth
  • (1/2 cup) chopped scallions
  • (2 Tbsp.) chopped garlic
  • (2 Tbsp.) peeled chopped fresh ginger
  • (2 tsp.) olive oil
  • (1 cup) chopped yellow onion
  • (1) red bell pepper (halved, seeded and diced)
  • (1 lb.) boneless pork tenderloin (cut into strips)
  • (1 Tbsp.) low-sodium soy sauce
  • (1 Tbsp.) sesame seeds

Ginger Garlic Pork Stir Fry

This classic, healthy stir-fry has an Asian spin with flavors of ginger and garlic.

    Instructions

  1. 1In a food processor, mince 1/4 cup chicken broth, scallions, garlic and ginger.
  2. 2Heat 1 tsp. olive oil in a large skillet over medium-high heat. Add onion and pepper, sauté 5 minutes, set aside.
  3. 3Add another teaspoon olive oil to skillet, add scallion mixture and sauté about 1 minute.
  4. 4Add pork strips and soy sauce, sauté another 4 minutes.
  5. 5Add the other 1/2 cup chicken broth and bring to a boil, then stir in broccoli and let cook another 3 minutes.
  6. 6Add onion and pepper back to pan, then sprinkle sesame seeds over the top and serve.
