Sweet Red Pepper Beef Pasta

  • (12 oz. jar) roasted sweet red peppers, drained
  • (1 lb.) lean ground beef (90% lean)
  • (1 small) onion, chopped
  • (14 1/2 oz.) diced tomatoes, undrained
  • (2 cloves) garlic, minced
  • (1 tsp.) dried oregano
  • (1 tsp.) dried basil
  • (3/4 tsp.) salt
  • (8 oz.) uncooked ziti or small tube pasta
  • (1 1/2 cups) cut fresh green beans
  • (1 1/2 cups) shredded part-skim mozzarella cheese

Sweet Red Pepper Beef Pasta

Ziti pasta in a roasted sweet red pepper meat sauce with green beans and mozzarella cheese.

  1. 1Process peppers in a food processor until smooth.
  2. 2Place a large skillet over medium-high heat. Add beef and onion. Cook until meat is browned, drain.
  3. 3Add pureed peppers, tomatoes, garlic, oregano, basil and salt. Bring to a boil, then simmer on medium 15 minutes.
  4. 4Fill a Dutch oven with 2 quarts cold water and place over High heat. When boiling, add pasta and cook according to package directions. At 5 minutes left, add green beans. Drain, return to pan.

  5. 5Add meat sauce and cheese, stir and serve.
