Garlic Rubbed Steak w/Pesto and White Bean Salad

Ingredients:
  • (1 tsp.) fresh lemon juice
  • (1/4 cup) extra virgin olive oil
  • (1 1/2 cups) loosely packed fresh basil leaves
  • (3) garlic cloves
  • (1 tsp.) salt
  • (1 tsp.) freshly ground black pepper
  • (1 lb.) sirloin steak, cut into four 1 1/2 in. thick portions
  • (2 15.5-oz.) cans white beans, rinsed and drained
  • (1 cup) grape tomatoes, halved
  • (1 Tbsp.) finely chopped red onion

Garlic Rubbed Steak w/Pesto and White Bean Salad

    Instructions

  1. 1Preheat outdoor grill or indoor grill pan to medium-high heat. Spray with cooking spray.
  2. 2Peel and halve one garlic clove and generously rub each steak, then season both sides with 1/2 tsp. salt and pepper. Grill 10-12 minutes, turning once.

  3. 3Combine lemon juice, olive oil, 1 cup basil, 1 garlic clove, 1/2 tsp. salt and 1/4 tsp. pepper in food processor until smooth, set aside.
  4. 4Spray a medium pan with cooking spray and place over medium-low heat. Mince remaining garlic clove, add to pan and saute 2 minutes, remove from heat.

  5. 5Combine beans, tomatoes, red onion, sauteed garlic, and rest of salt and pepper in a serving bowl. Tear rest of basil, add to beans, stir to combine. Top steaks with basil pesto, serve with bean salad. Enjoy!
