Black Bean and Corn Meat-less Balls
A vegetarian spin on meatballs made with black beans, corn and breadcrumbs, served with a tomato and avocado salsa.

Instructions
1Preheat oven to 425°F. Spray a baking sheet with cooking spray.
2In a medium bowl, combine tomatoes, scallions, cilantro, 1/2 tsp. chili powder and salt, set aside.
3In a large bowl, mash together beans and cumin. Add 1 cup tomatoes, corn and 1/4 cup breadcrumbs, stir to combine.
4Combine 1/3 cup breadcrumbs, oil and 1/2 tsp. chili powder in a small bowl. Measure out 1/2 cup bean mixture each and form into balls. Coat with breadcrumbs and place on greased baking sheet.
5Bake about 20 minutes, or until golden brown. Meanwhile, add avocado to rest of tomatoes, mix and serve with bean balls.
