Stuffed Tofu and Spinach Pizza
Whole-wheat pizza dough envelops crumbled tofu, greens, tomatoes and cheese, then gets baked until golden brown.

Instructions
1Place oven rack to lower third position and preheat oven to 475°F. Spray a large baking sheet with cooking spray.
2In a large bowl, combine crumbled tofu, spinach, tomatoes, Parmesan, mozzarella, basil, onion powder, salt
and pepper.
3Lightly flour a flat surface and roll the pizza dough out into a 16x18 in. rectangle. Place on baking sheet, top with filling and fold the remaining dough over the top. Crimp with a
fork.
4Make 3 cuts on the top of the pizza and spray with cooking spray. Bake 18-20 minutes, or until browned and
serve.
