Pecan Orange Chicken

  • (4) boneless, skinless chicken breasts
  • (1/2 cup) pecan halves
  • (1/4 cup) plain dry breadcrumbs
  • (1 1/2 tsp.) freshly grated orange zest
  • (1/2 tsp.) salt
  • (1/4 tsp.) ground chipotle pepper
  • (1 large) egg white
  • (2 Tbsp.) water
  • (1 Tbsp.) canola oil

Pecan Orange Chicken

Thin chicken breasts coated in a pecan orange breading and pan seared until crispy.

  1. 1Place one chicken breast at a time between plastic wrap and pound to 1/4 in. thickness with a meat mallet.
  2. 2Pulse pecans, breadcrumbs, orange zest, salt and ground chipotle in a food processor until ground. Place into a shallow dish. In another shallow dish, whisk together egg white and water.

  3. 3Place a large, nonstick skillet over medium heat. Add 1 1/2 tsp. oil. Using opposite hands, dip both sides of each chicken breast into egg whites, then into dry mixture.

  4. 4Place 2 chicken breasts into the pan at a time and cook 4-8 minutes, turning once. Repeat with remaining chicken and oil. Serve and enjoy!
