Tuna Noodle Casserole

Ingredients:
  • (8 oz.) spaghetti
  • (1 Tbsp.) olive oil
  • (1 medium) onion, chopped
  • (8 oz. package) sliced mushrooms
  • (1/2 tsp.) dried thyme
  • (1/4 tsp.) salt
  • (1/4 tsp.) freshly ground black pepper
  • (1 cup) frozen peas
  • (3 cloves) garlic, minced
  • (2 cups) fat-free milk
  • (2 Tbsp.) all-purpose flour
  • (2 6 oz. cans) solid white tuna packed in water, drained
  • (1/4 cup) fresh parsley, chopped
  • (1 cup) french fried onions, such as French's

Tuna Noodle Casserole

A delicious, classic casserole of white tuna, spaghetti noodles and peas in a thick white sauce.

    Instructions

  1. 1Preheat oven to 375°F. Spray an 8 in. square baking dish with cooking spray.
  2. 2Fill a large pot with 2 quarts cold water and place over High heat. When boiling, add spaghetti and cook according to package. Drain, set aside in a large bowl.

  3. 3Place a large, nonstick skillet over medium-high heat. Add oil. When hot, add onion, mushrooms, thyme, salt and pepper.
  4. 4Cook 10-12 minutes, stirring every few minutes. Add peas and garlic, cook another 2 minutes.
  5. 5In a small bowl, combine milk and flour. Add to skillet, decrease heat to medium and cook 4-5 minutes, or until thickened.
  6. 6Pour over spaghetti, add tuna and parsley. Toss, pour into greased baking dish. Top with fried onions.
  7. 7Cover and bake 15 minutes, then another 5 minutes uncovered. Cool 10 minutes and serve.
