Nutty Strawberry Chicken w/Spinach

  • (1/2 cup) panko (Japanese) bread crumbs
  • (1/3 cup) unblanched almonds, coarsely ground
  • (1/2 tsp.) salt
  • (1/4 tsp.) pepper
  • (4) boneless, skinless chicken breast halves
  • (3 tsp.) canola oil, divided
  • (1/4 cup) shallots, chopped
  • (1/3 cup) reduced-sodium chicken broth
  • (1/3 cup) strawberry preserves
  • (3 Tbsp.) balsamic vinegar
  • (1 Tbsp.) fresh rosemary, minced (or 1 tsp. dried, crushed)
  • (9 oz. package) fresh baby spinach

Nutty Strawberry Chicken w/Spinach

  1. 1Spray a large, nonstick skillet with butter-flavored cooking spray and place over medium heat. Add 2 tsp. oil.
  2. 2Combine bread crumbs, almonds, salt and pepper in a large ziplock bag. Shake chicken in mixture one piece at a time, place in skillet.
  3. 3Cook 8-10 minutes or until cooked through, flipping once. Set aside on a plate with a foil tent.
  4. 4Place skillet back over medium heat. Add remaining 1 tsp. oil and shallots. Cook until tender, stirring often. Add broth, preserves, vinegar and rosemary. Bring to a boil, then simmer on medium-low 5-6 minutes.

  5. 5As sauce cooks, fill a large saucepan with 1/2 inch of water and place over High heat. When boiling, add spinach. Cover and cook 3-5 minutes. Drain.

  6. 6Serve 1 chicken breast with 2 Tbsp. sauce over 1/4 cup spinach. Enjoy!
