Marinated Snapper w/Creamy Pesto

  • (1/4 cup) fresh lemon juice
  • (1/4 cup) dry white wine
  • (1 tsp.) anchovy paste
  • (15 oz.) red snapper fillets
  • (1 cup) packed fresh basil leaves
  • (1/2 cup) packed fresh parsley leaves
  • (1/2 cup) packed fresh mint leaves
  • (1 Tbsp.) plus (1 tsp.) olive oil
  • (2) garlic cloves
  • (1/4 tsp.) salt
  • Freshly ground black pepper, to taste

Marinated Snapper w/Creamy Pesto

This flaky and flavorful fish dish is perfect for grilling season.

  1. 1Heat your grill to medium heat.
  2. 2Prepare marinade by combining lemon juice, wine and anchovies in a resealable plastic bag.
  3. 3Add the fish, turning to coat in the marinade, then seal the bag, squeezing out the air.
  4. 4Refrigerate at least 2 hours or overnight, turning the bag occasionally.
  5. 5Spray broiler or grill rack with cooking spray and place the fish 5 inches from the direct heat.
  6. 6Grill the fish for 10 minutes, turning halfway through.
  7. 7Meanwhile, to make the pesto, combine the basil, parsley, mint, oil, garlic, salt and pepper in a food processor or blender until smooth.
  8. 8Spread the herb mixture over the fish and grill for another 2 minutes, or serve cold on the side as a dip or spread. Enjoy!
