Tomato Basil Bacon Linguine

  • (4 slices) bacon, diced
  • (1/2 cup) onion, chopped
  • (1 tsp.) minced garlic
  • (1/4 tsp.) crushed red pepper flakes
  • (2 14.5 oz. cans) stewed tomatoes
  • (1 lb.) linguine pasta, uncooked
  • (1 Tbsp.) fresh basil, chopped
  • (2 Tbsp.) grated Parmesan cheese

Tomato Basil Bacon Linguine

Thick linguini pasta with fresh basil in a spicy garlic tomato and bacon sauce.

  1. 1Place a large saucepan over medium-high heat. Add bacon and cook 5 minutes, or until crispy. Reserve 2 Tbsp. drippings, drain the rest.
  2. 2Place pan back over medium heat, add onions and cook 3 minutes. Add garlic and red pepper flakes, stir for 30 seconds.
  3. 3Stir in tomatoes (w/juice) and simmer 10 minutes, using a wooden spoon to break up the tomatoes.
  4. 4Fill a large pot with 4 quarts cold water and place over High heat. When boiling, add pasta and cook according to package directions, to al dente. Drain.

  5. 5Add basil and pasta to sauce, toss and serve with Parmesan over top.
