(1 lb.) fresh or frozen whole-wheat cheese ravioli
(1 large clove) garlic, minced
(1/2 tsp.) kosher salt
(1/4 cup) extra-virgin olive oil
(2 large) shallots, sliced
(3 Tbsp.) red-wine vinegar
(1 tsp.) Dijon mustard
Freshly ground pepper to taste
(6 cups) arugula
(1/2 cup) shaved Pecorino Romano or Parmesan cheese

Garlic Dijon Ravioli
Whole-wheat cheese ravioli tossed with peppery arugula and a tangy garlic dijon dressing.

Instructions
1Fill a large pot with 5-6 quarts cold water and place it over High heat. When boiling, add ravioli and cook 7-9 minutes, or follow cooking times on package. Drain.
2Place a small skillet over medium heat. Add oil. Use a chefs knife to mash garlic and salt together to form a paste. Add to pan with shallots and cook 2-3 minutes.
3Add vinegar, mustard and pepper, stir to combine. Pour into a large bowl. Toss ravioli with arugula and dressing. Add cheese and serve.
