Garlic Dijon Ravioli

Ingredients:
  • (1 lb.) fresh or frozen whole-wheat cheese ravioli
  • (1 large clove) garlic, minced
  • (1/2 tsp.) kosher salt
  • (1/4 cup) extra-virgin olive oil
  • (2 large) shallots, sliced
  • (3 Tbsp.) red-wine vinegar
  • (1 tsp.) Dijon mustard
  • Freshly ground pepper to taste
  • (6 cups) arugula
  • (1/2 cup) shaved Pecorino Romano or Parmesan cheese

Garlic Dijon Ravioli

Whole-wheat cheese ravioli tossed with peppery arugula and a tangy garlic dijon dressing.

    Instructions

  1. 1Fill a large pot with 5-6 quarts cold water and place it over High heat. When boiling, add ravioli and cook 7-9 minutes, or follow cooking times on package. Drain.

  2. 2Place a small skillet over medium heat. Add oil. Use a chefs knife to mash garlic and salt together to form a paste. Add to pan with shallots and cook 2-3 minutes.

  3. 3Add vinegar, mustard and pepper, stir to combine. Pour into a large bowl. Toss ravioli with arugula and dressing. Add cheese and serve.
