Southwestern Turkey Soup

Ingredients:
  • (2 tsp.) canola oil
  • (2) leeks, trimmed, thoroughly cleaned and chopped
  • (1 medium) red bell pepper, cored, seeded and chopped
  • (3 cloves) garlic, finely chopped
  • (4 cups) reduced-sodium chicken broth
  • (2 medium) butternut squash, peeled, seeded and cut into 1 in. cubes
  • (2 Tbsp.) fresh thyme, chopped (or 2 tsp. dried)
  • (1 1/2 tsp.) ground cumin
  • (1 lb.) turkey cutlets, cut into 1/2 x 2 in. strips
  • (2 cups) frozen corn kernels
  • (2 Tbsp.) lime juice
  • (1/2 tsp.) crushed red pepper
  • Salt and freshly ground pepper

Southwestern Turkey Soup

Turkey strips and tons of fresh veggies simmered in chicken broth with warm southwestern spices.

    Instructions

  1. 1Place a large pot over medium-high heat. Add oil. When hot, add leeks and pepper, cook 3-4 minutes, stirring often. Stir in garlic, let cook another minute.

  2. 2Add broth, squash, thyme and cumin, stir to combine. Cover and bring to a boil. Once boiling, reduce heat to medium-low and cook another 10 minutes.

  3. 3Stir in turkey and corn, bring to a simmer and cook 3-4 minutes. When serving, top with a squeeze of lime juice, a pinch of crushed red pepper, salt and pepper to taste.
