Blue Cheese Mushroom Burgers

  • (1/3 cup) nonfat plain yogurt
  • (3 Tbsp.) crumbled blue cheese
  • (1/2 tsp.) balsamic vinegar
  • (2/3 cup) bulgur
  • (3/4 tsp.) salt, divided
  • (1 cup) boiling water
  • (6 tsp.) extra-virgin olive oil, divided
  • (8 oz.) white or brown mushrooms, stems trimmed, wiped clean and chopped
  • (1 large) onion, chopped
  • (1 1/2 Tbsp.) balsamic vinegar
  • (3/4 cup) pecan halves
  • (1 large) egg, lightly beaten
  • (1/2 cup) fine dry breadcrumbs
  • Freshly ground pepper, to taste
  • (8) whole-wheat buns, split and toasted
  • Watercress, for garnish

Blue Cheese Mushroom Burgers

Delicious mushroom patties served on whole-wheat buns with watercress and a creamy blue cheese sauce.

  1. 1In a small bowl, mix together yogurt, blue cheese and vinegar, set aside.
  2. 2Combine bulgur, 1/4 tsp. salt and boiling water in a small bowl. Cover and set aside 20 minutes.
  3. 3Place a large nonstick skillet over medium heat. Add 2 tsp. oil. When hot, add mushrooms, onion and 1/2 tsp. salt. Cook 8-10 minutes, stirring often. Add vinegar, stir and set aside to cool 30 minutes.

  4. 4Place a small skillet over medium-low heat. Add pecans, toast 4-6 minutes. Set aside to cool.
  5. 5Pulse vegetables and pecans in a food processor until chopped. Add egg and bulgur, pulse until combined. Pour into a bowl, mix in breadcrumbs and pepper.

  6. 6Place a large, nonstick skillet over medium heat. Add 2 tsp. oil. Form mixture into 8 equal patties. Cook four patties for 8 minutes, turning once. Repeat, using the rest of the oil.

  7. 7Serve on whole-wheat buns with watercress and 1 Tbsp. blue-cheese sauce.
