Whole Wheat Skillet Lasagna

  • (8 oz.) whole-wheat rotini or fusilli
  • (1 Tbsp.) extra-virgin olive oil
  • (1) onion, chopped
  • (3 cloves) garlic, sliced
  • (3 1/2 cups) white mushrooms, sliced
  • (1/2 tsp.) salt
  • (1/4 tsp.) freshly ground pepper
  • (14 oz. can) diced tomatoes with Italian herbs
  • (8 cups) baby spinach
  • (1/2 tsp.) crushed red pepper, optional
  • (3/4 cup) part-skim ricotta cheese

Whole Wheat Skillet Lasagna

Sauteed mushrooms, Italian style tomatoes and wilted spinach combined with whole-wheat pasta and topped with ricotta cheese.

  1. 1Fill a large pot with 2 quarts water and place it over High heat. When boiling, add pasta and cook 8-10 minutes, or follow cooking times on package. Drain and set aside.

  2. 2Place a large nonstick skillet over medium heat. Add oil. When hot, add onion and garlic. Cook 3 minutes, stirring often. Add mushrooms, salt and pepper, cook another 4-6 minutes.

  3. 3Stir in tomatoes, spinach and crushed red pepper. Cook on medium-high for 4 minutes, stirring once. Toss in pasta. Top each serving with 3 Tbsp. ricotta cheese and enjoy.
