Spinach and Cheese White Lasagna

Ingredients:
  • (8 oz.) lasagna noodles, preferably whole-wheat
  • (3 Tbsp.) extra-virgin olive oil
  • (3 large) sweet onions, thinly sliced
  • (4 medium) portobello mushroom caps, gills removed, diced
  • (1/2 cup) red wine
  • (1 tsp.) salt
  • Freshly ground pepper, to taste
  • (4 cups) baby spinach
  • (2 cups) nonfat ricotta cheese
  • (1/2 cup) fresh basil, chopped
  • (1/2 tsp.) salt
  • (2 Tbsp.) extra-virgin olive oil
  • (3 Tbsp.) all-purpose flour
  • (2 cups) low-fat milk
  • (1/2 tsp.) salt
  • (2 oz.) crumbled Gorgonzola cheese
  • (1/3 cup) walnuts, chopped
  • (1/4 cup) fresh basil, chopped

Spinach and Cheese White Lasagna

A nutritious lasagna with whole-wheat noodles, a spinach and ricotta filling and caramelized onions.

    Instructions

  1. 1Fill a large pot with 2 quarts cold water and place over High heat. When boiling, add noodles and cook 2 minutes less than cooking time on package. Drain, place back in pot, cover with cold water and set aside.

  2. 2Place a large skillet over medium heat. Add 3 Tbsp. oil. When hot, add onions and cook 25 minutes, stirring often. Stir in mushrooms and cook 3 minutes.

  3. 3Add wine and 1 tsp. salt, cook another 2-3 minutes. Add pepper, set aside off heat. Meanwhile, process spinach, ricotta, basil and 1/2 tsp. salt in a food processor until smooth, set aside.

  4. 4Place a medium saucepan over medium-high heat. Add 2 Tbsp. oil. When hot, add flour and stir 30 seconds.
  5. 5While whisking, add milk and 1/2 tsp. salt, continue to whisk until boiling and thick. Stir in Gorgonzola, set aside.
  6. 6Preheat oven to 375°F. Spray a 9x13 in. baking pan with cooking spray. Drain noodles.
  7. 7Layer 1/2 cup white sauce, noodles, half of spinach filling and 1/3 onion mixture. Repeat with noodles, spinach, onion, white sauce and another layer of noodles.

  8. 8Top with rest of onions, white sauce, walnuts and basil. Bake 30 minutes, let cool 5 minutes and serve.
