Cheese Tortellini w/Mixed Vegetables

Ingredients:
  • (14 oz. can) vegetable broth
  • (2 Tbsp.) all-purpose flour
  • (1 Tbsp.) extra-virgin olive oil
  • (3 cloves) garlic, sliced
  • (1 cup) shredded fontina cheese or (3/4 cup) shredded Parmesan cheese
  • (1 Tbsp.) fresh tarragon, dill or chives, chopped (or 1 tsp. dried tarragon)
  • (1/8 tsp.) salt
  • (16 oz. bag) frozen mixed vegetables
  • (16 oz. package) frozen cheese tortellini

Cheese Tortellini w/Mixed Vegetables

This easy semi-homemade dish features frozen cheese tortellini and mixed vegetables in a quick white cheese sauce.

    Instructions

  1. 1Fill a large pot with 5-6 quarts cold water and place over High heat.
  2. 2Place a large skillet over medium heat. Add oil. When hot, add garlic and stir 1-2 minutes. In a small bowl, whisk together broth and flour. Add to pan, boil and cook 3 minutes.

  3. 3Take off heat, add cheese, tarragon and salt, set aside.
  4. 4When boiling, add vegetables and tortellini to water, cook 3-5 minutes. Drain, toss with sauce and serve.
