(16 oz. package) shelf-stable gnocchi
(1 medium) yellow onion, thinly sliced
(4 cloves) garlic, minced
(1/2 cup) water
(6 cups) chard leaves or spinach, chopped
(15 oz. can) diced tomatoes w/Italian seasonings
(15 oz. can) white beans, rinsed
(1/4 tsp.) freshly ground pepper
(1/2 cup) part-skim mozzarella cheese, shredded
(1/4 cup) Parmesan cheese, finely shredded

Easy Cheesy Gnocchi
Plump gnocchi with nutritious greens, tomatoes, hearty white beans and two kinds of melted cheese.

Instructions
1Place a large nonstick skillet over medium heat. Add 1 Tbsp. oil. When hot, add gnocchi and cook 5-7 minutes or until plump, stirring frequently. Remove from pan and set aside.
2Place pan back over medium heat, add 1 tsp. oil and onion. Cook 2 minutes, stirring often. Add garlic and water, stir to combine. Cover and cook 4-6 minutes, or until onion is tender.
3Stir in chard, cook 1-2 minutes. Add tomatoes, beans and pepper, stir to combine and bring to a summer. Add gnocchi back to pan, top with cheeses.
4Cover, cook about 3 minutes, until cheese melts. Serve and enjoy!
