Italian Mushroom Pizza

  • (8 oz.) cremini mushrooms, sliced
  • (1/4 cup) shallots, finely chopped
  • (1 clove) garlic, minced
  • (1 tsp.) fresh thyme, chopped
  • (2 tsp.) sherry vinegar
  • (10 oz.) Italian cheese-flavored thin pizza crust (such as Boboli)
  • (2 oz.) prosciutto, cut into thin strips
  • (1/3 cup) shredded fontina cheese

Italian Mushroom Pizza

Cremini mushrooms and shallots layered with salty prosciutto and fontina cheese on an Italian cheese pizza crust.

  1. 1Preheat oven to 450°F.
  2. 2Spray a large nonstick skillet with cooking spray and place it over medium-high heat. Add mushrooms and shallots, saute 7 minutes.
  3. 3Add garlic and thyme, saute another minute. Add vinegar, stir to combine. Set aside off heat.
  4. 4Bake the crust directly on the bottom oven rack for 4 minutes, then remove it and place it on a baking sheet.
  5. 5Top crust with a layer each of mushrooms, prosciutto and cheese. Bake 6 minutes, or until cheese is melted.
