Crab Stuffed Chicken w/Wine Sauce

  • (3) boneless skinless chicken breasts, halved
  • (4 oz.) canned crab meat
  • (1/4 cup) dry fine bread crumbs
  • (1/4 cup) reduced-fat Swiss cheese
  • (2 Tbsp.) finely chopped red bell pepper
  • (3 Tbsp.) white wine
  • Low-fat chicken bouillon cube
  • (1/2 cup) boiling water
  • (1) bay leaf
  • (3 Tbsp.) chopped fresh parsley
  • (1 tsp.) cornstarch
  • (1 Tbsp.) white wine
  • Salt
  • Pepper

Crab Stuffed Chicken w/Wine Sauce

A delicious white wine sauce is the finishing touch to this protein packed dish.

  1. 1Preheat oven to 350°F.
  2. 2Using a rolling pin, flatten each chicken breast between two sheets of plastic wrap until it is about 1/4 inch thick. Sprinkle several drops of white wine over each piece to moisten.

  3. 3In a large bowl, combine bread crumbs, crab meat, red pepper and cheese to make the stuffing.
  4. 4Place 1/4 cup of stuffing on the center of each chicken breast. Start at one end and roll it up, tucking in the sides to hold the stuffing.
  5. 5Fasten each with 1-2 wooden picks. Place them in a two quart Dutch oven, then season with salt and pepper.
  6. 6In a small cup or dish, combine 1/2 cup boiling water and one chicken bouillon cube, stir until melted. Add bay leaf and parsley, pour over chicken rolls.

  7. 7Bake, covered, for 45 minutes. Remove chicken rolls and bay leaf from the pan, leaving just the cooking liquid. Heat the liquid on the stove over medium high heat.

  8. 8Meanwhile, in a separate bowl, combine cornstarch and white wine, then add it to the liquid, whisking as you pour.
  9. 9Heat over medium high heat 5-10 minutes until sauce thickens, then remove the wooden picks from the chicken, slice, then pour the sauce over it to serve.
