Southwestern Sweet Potato Burritos

Ingredients:
  • (1 large) sweet potato, peeled and cut into 1/2 in. cubes
  • (1 medium) onion, finely chopped
  • (1 Tbsp.) water
  • (15 oz. can) black beans, rinsed and drained
  • (1 cup) frozen corn
  • (1 medium) green pepper, chopped
  • (2 Tbsp.) lemon juice
  • (3 cloves) garlic, minced
  • (1 Tbsp.) chili powder
  • (2 tsp.) dried oregano
  • (1 tsp.) ground cumin
  • (8) whole wheat tortillas (8 in. diameter), warmed
  • (2 cups) shredded Monterey Jack cheese
  • (1/2 cup) fat-free plain yogurt
  • (1/2 cup) salsa

Southwestern Sweet Potato Burritos

Warm whole-wheat tortillas stuffed with a sweet-potato and black bean filling, baked and topped with creamy yogurt and salsa.

    Instructions

  1. 1Preheat oven to 350°F. Spray a 13x9 in. baking dish with cooking spray.
  2. 2Place sweet potato, onion and water in a large microwave-safe bowl. Cover and microwave on High 4-5 minutes. Add beans, corn, green pepper, lemon juice, garlic and seasonings, stir to combine.

  3. 3Top each tortilla with 1/2 cup filling and 1/4 cup cheese. Fold in sides and roll up. Place in greased baking dish, seam-side down.
  4. 4Cover and bake 25-30 minutes. Top with yogurt and salsa and serve.
