Quick Lemon Shrimp w/Broccoli

  • (5 cups) broccoli florets
  • (1 Tbsp.) lemon rind, grated and divided
  • (1 Tbsp.) fresh lemon juice
  • (1/2 tsp.) salt, divided
  • (1/2 tsp.) freshly ground black pepper, divided
  • (1 1/2 lbs.) large shrimp, peeled and deveined
  • (2 Tbsp.) extra-virgin olive oil
  • (1/4 tsp.) crushed red pepper

Quick Lemon Shrimp w/Broccoli

Fresh, large shrimp tossed in a lemon seasoning, baked and served with lemon and red pepper broccoli.

  1. 1Preheat oven to 425°F. Spray a jelly-roll pan with cooking spray.
  2. 2Place broccoli in a large pot. cover with water and boil 1 minute. Meanwhile, fill a large bowl with cold water and ice. Drain broccoli, then transfer to ice water until cooled. Drain again, set aside.

  3. 3In a medium bowl, combine 1 1/2 tsp. lemon rind, lemon juice, 1/2 tsp. salt and 1/2 tsp. black pepper. Toss shrimp in mixture, place on greased baking sheet. Add broccoli to pan.

  4. 4Bake 8 minutes or until shrimp are tender.
  5. 5Meanwhile, in a large bowl whisk together oil, rest of lemon rind, rest of salt, rest of pepper and crushed red pepper. Toss broccoli in mixture, serve with shrimp.
