Instructions
1Place a medium saucepan over medium-high heat. Add oil. When hot, add onion, cook 5 minutes, stirring frequently. Stir in garlic and thyme, cook another minute.
2Add beans, water, tomatoes and broth, turn up heat to high. When bubbling, reduce heat and simmer 5 minutes, using a wooden spoon to crush tomatoes.
3Stir in spinach and chicken, cook 2 minutes. Season with salt and pepper, serve.
