Creamy Chicken and Mushrooms

  • (2 5-oz.) boneless, skinless chicken breasts, trimmed and tenders removed
  • (1/2 tsp.) freshly ground pepper
  • (1/4 tsp.) salt
  • (1 Tbsp.) canola oil
  • (1 medium) shallot, minced
  • (1 cup) shiitake mushroom caps, thinly sliced
  • (2 Tbsp.) dry vermouth, or dry white wine
  • (1/4 cup) reduced-sodium chicken broth
  • (2 Tbsp.) heavy cream
  • (2 Tbsp.) fresh chives or scallion greens, minced

Creamy Chicken and Mushrooms

Lean chicken breasts and hearty shiitake mushrooms come together in a creamy wine sauce.

  1. 1Place a medium skillet over medium heat. Add oil. Season both sides of chicken with salt and pepper.
  2. 2Cook 12-16 minutes, flipping several times, until cooked through. Set aside on a plate with a foil tent.
  3. 3Place skillet back over medium heat and cook 30 seconds. Add mushrooms and cook another 2 minutes, stirring occasionally. Add vermouth and cook another minute, scraping the bottom of the pan.

  4. 4Add broth and cook another 1-2 minutes, then add cream and chives. When simmering, add chicken back to pan, coat with sauce and cook until hot.
