Chipotle Beef Burgers

  • (1 lb.) 90%-lean ground beef
  • (3/4 cup) fresh cilantro, chopped and divided
  • (1/2 cup) red onion, finely chopped
  • (1/4 cup) scallions, chopped
  • (2 tsp.) garlic, minced
  • (1 Tbsp.) chili powder
  • (1 tsp.) ground cumin
  • (1/2 tsp.) dried oregano
  • (1/2 tsp.) freshly ground pepper
  • (1/4 tsp.) salt
  • (1/3 cup) reduced-fat mayonnaise
  • (1 Tbsp.) lime juice
  • (1 Tbsp.) chipotle chile in adobo, chopped
  • (1/2 cup) shredded Monterey Jack cheese
  • (4) French rolls, preferably whole-wheat, split and toasted
  • (2) roasted Anaheim or poblano peppers
  • (1 cup) shredded green cabbage
  • (4 slices) tomato
  • (4 thin slices) red onion

Chipotle Beef Burgers

Grilled lean cheeseburgers served on toasted French rolls with a chipotle mayo and roasted peppers.

  1. 1Preheat outdoor grill or indoor grill pan to medium-high heat.
  2. 2In a large bowl, combine beef, 1/4 cup cilantro, onion, scallions, garlic, chili powder, cumin, oregano, pepper and salt. Form into 4 equal, oval shaped patties.

  3. 3Dip a small towel into olive oil and rub it on the grill rack. Place burgers on the grill and cook 12 minutes, turning once.
  4. 4Meanwhile, mix together 1/2 cup cilantro, mayonnaise, lime juice and chipotle, set aside. Peel, seed and halve roasted peppers.
  5. 5Evenly distribute cheese between burgers and cook another minute, or until melted. Serve each cheeseburger on a toasted roll with chipotle mayonnaise, a pepper half, cabbage, tomato and onion. Enjoy!
