Sweet Potato Chicken Pot Pie
Ingredients:
- (2 Tbsp.) olive oil, divided
- (3/4 lb.) boneless, skinless chicken breast, cut into bite size
pieces
- (2 ribs) celery, thinly sliced
- (2 medium) carrots, sliced
- (1 large) onion, chopped
- (1 clove) garlic, minced
- (2 medium) sweet potatoes, peeled and cut into 1 in. cubes
- (2 medium) turnips, peeled and cut into 1/2 in. cubes
- (8 cups) reduced sodium chicken broth
- (2 sprigs) thyme
- (1) bay leaf
- (1/2 tsp.) salt
- (1/4 tsp.) freshly ground black pepper
- (1 1/2 Tbsp.) cornstarch
- (1/2 cup) water
- (2 cups) sifted all purpose flour
- (2 tsp.) baking powder
- (1 tsp.) baking soda
- (1/2 tsp.) salt
- (1/4 cup) canola oil
- (1 cup) buttermilk

Instructions
- 1Place a large Dutch oven over medium-high heat. Add 1 Tbsp. oil. When hot, add chicken and cook 5-7 minutes, stirring occasionally. Set aside on a plate.
- 2Place Dutch oven back over medium-high heat. Add other 1 Tbsp. oil with celery, carrots and onion. Cook 3-5 minutes, stirring every so often.
- 3Add garlic, chicken (w/juices), sweet potatoes, turnips, broth, thyme, bay leaf, salt and pepper. Bring to a boil, then simmer 20 minutes on medium heat. Take out bay
leaf.
- 4Meanwhile, use a fork to mix together flour, baking powder, baking soda and salt. Mix in oil and buttermilk, set aside.
- 5Pour water over cornstarch in a small bowl, mix together until pastey. Add to filling, cook 2-3 minutes.
- 6Add tablespoonfuls of biscuit mixture over filling, simmer 10 minutes uncovered, then 10 minutes covered. Serve when biscuits are fully cooked.
