Instructions
1Fill a large pot with 2 quarts water and place it over High heat. When boiling, add pasta and cook 8-10 minutes, or follow cooking times on package. Drain and set aside.
2Place a large nonstick skillet over medium heat. Add oil. When hot, add onion and garlic. Cook 3 minutes, stirring often. Add mushrooms, salt and pepper, cook another 4-6
minutes.
3Stir in tomatoes, spinach and crushed red pepper. Cook on medium-high for 4 minutes, stirring once. Toss in pasta. Top each serving with 3 Tbsp. ricotta cheese and enjoy.
