Parmesan Tomato Penne

  • (16 oz. package) penne pasta
  • (1 cup) onions, thinly sliced
  • (2 Tbsp.) butter
  • (2 Tbsp.) fresh thyme, minced (or 2 tsp. dried)
  • (2 Tbsp.) fresh basil, minced (or 2 tsp. dried)
  • (1 tsp.) salt
  • (1 1/2 cups) half-and-half cream, divided
  • (1/2 cup) white wine
  • (1 Tbsp.) tomato paste
  • (2 Tbsp.) all-purpose flour
  • (1/2 cup) shredded Parmigiano-Reggiano cheese, divided

Parmesan Tomato Penne

A quick and easy dish of penne in a tomato cream sauce with cheese and lots of herb flavor.

  1. 1Fill a large pot with 4 quarts cold water and place over High heat. When boiling, add pasta and cook according to package. Drain.
  2. 2Place a large, nonstick skillet over medium heat. Add butter. When melted, add onions and cook 8-10 minutes. Stir in thyme, basil and salt, cook another minute. Add 1 cup cream, wine and tomato paste.

  3. 3In a small bowl, whisk together flour and 1/2 cup cream. Add to skillet. Bring to a boil, continue to stir 2 minutes to thicken. Add 1/4 cup cheese and pasta. Toss and serve with rest of cheese.
